Salmon Teriyaki : Recipe

Salmon glazed in a mixture of sake, rice wine, and soy sauce.

INGREDIENTS

  • 1/2 cup sake
  • 1/4 cup Japanese rice wine
  • 1/4 cup soy sauce
  • 1 tablespoon vegetable oil, plus more if needed
  • boneless salmon fillets (about 1 inch thick)
  • Salt

Method

  • Combine sake, wine, and soy sauce in a small bowl, give a good mix and then set teriyaki sauce aside.
  • Heat oil in a large skillet over medium-high.
  • Season salmon lightly with salt. Cook, skin side down, until skin is brown and crisp, about 4 minutes. Turn and cook until other side is just beginning to brown, about 2 minutes.
  • Transfer to a plate when done.
  • Remove the fat from the skillet.
  • Bring teriyaki sauce to a boil in skillet over medium heat.
  • Cook until reduced by two-thirds, about 4 minutes.
  • Now add salmon, skin side up, and cook, spooning sauce over, until sauce is syrupy and salmon is just cooked through.

Honey Soya Chicken Breasts : Recipe

INGREDIENTS

  • 4 chicken breasts
  • 1/4 cup (90g) honey
  • 1/3 cup (80ml) Hamadaya soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 1 teaspoon grated ginger
  • 3 garlic cloves, grated
  • Sesame seeds

Method

  • Preheat your oven to 375F (190C).
  • In a large bowl mix the soy sauce, honey, lemon juice and sesame oil. Add freshly grated ginger and garlic. Season with black pepper and mix well until combined.
  • Place the chicken breasts in the bowl, cover and marinate in the fridge for at least 1 hour.
  • Place the marinated chicken in a baking dish, pour few tablespoons of the marinate over the chicken.
  • Sprinkle some sesame seeds.
  • Bake for 40-45 minutes (Depends on the size of the chicken breast, small pieces can take even less time) or until or until the chicken is fully cooked.
  • After each 15 minutes pour few tablespoons of the marinate.

Soya Sauce Yummy Noodles : Recipe

Ingredients:

Noodle sauce Ingredients

  • 250ml hot water
  • 1 teaspoon sugar
  • 1 teaspoon chicken stock powder
  • 1 tablespoon oyster sauce
  • 5 tablespoon Hamadaya soy sauce
  • A few dashes of white pepper
  • 1 tablespoon sesame oil

Other Ingredients

  • 3 cloves chopped garlic
  • 2 spring onion chopped or keep as small stocks
  • 300g egg noodles

Method

  • Make your noodles, following the packets instructions and set aside.
  • For the sauce in a bowl add the water, sugar, chicken stock powder, oyster sauce, Hamadaya Soy Sauce, pepper, sesame oil and mix well and set aside.
  • Now heat up your wok or pan and add 1tbsp oil (medium to medium high)
  • Add your garlic and onions, mix until you smell the fragrance
  • Now add the noodles and mix well and fry for 2 to 3 mins
  • Now add your sauce and mix well so all noodles are coated
  • Fry until sauce has been reduced
  • Plate up and enjoy
