Yorkshire-based and proud of it, we’re a family-run, whole-carcass butcher, working in partnership with the finest small-scale, sustainable farms on The Dales. Specialising in heritage breeds of cattle, sheep and pigs, wild venison, and native game birds, our meat is slow-grown and free-roaming, just as nature intended.

The Meats

The folks at Swaledale Butchers reached out, inviting me to sample some of their meats. Based in Yorkshire, they take pride in their business operations. Intrigued by new businesses and foods, I enthusiastically accepted. Although not a master chef, I decided to experiment with a few dishes and share the recipes. While I acknowledge there may be better dishes out there, this represents my current culinary skills.

I received the following:

  • Calabrian Sausages £5.30
  • Flat Iron Steak £13.35
  • Ribeye Steak £25.75
  • Leg of Pork Roast, Rolled & Boneless £9.20

Honestly, I was uncertain where to begin, having never really cooked steak before. Each time I’ve enjoyed steak, it’s been at a restaurant. So, I opted to begin with the Calabrian sausage, and I devised this recipe. Truth be told, it tasted fantastic. The sausage was the standout element, making this a dish I would gladly recreate repeatedly.

The Cooking…

To begin, I chose to create a recipe featuring Calabrian sausage. After a bit of Googling, I observed numerous pasta dishes, which served as my inspiration.

If you take a look at the recipe, you’ll find mouth-watering photos documenting my pasta-making journey from start to finish.

The aroma of cooking the Calabrian sausage in the pan triggered literal mouthwatering. Although tempted to devour them right away, I restrained myself to ensure they were added to the pasta dish.

After completing the dish, I sat down and savored it. As mentioned at the beginning of this blog post, it’s a dish I’d gladly recreate.

It’s remarkably easy, quick, and incredibly flavorful—especially with the Calabrian sausages from these guys, whose flavor is truly exceptional.

I highly recommend checking them out.

While I’m certain you can come up with other ideas, this was my initial concept, and I’m pleased with how delectable it turned out.

The Ribeye Steak

Garlic Butter Ribeye Steak with Roast Potatoes : Recipe

Following the delightful pasta dish, the challenge was deciding what to cook next and which meat to use. I settled on the ribeye steak, aiming for a more traditional approach—garlic butter drizzled over the ribeye steak accompanied by roast potatoes. While this seemed straightforward in my mind, I found myself doing a bit of research on the proper method for cooking ribeye steaks.

After conducting a bit of research, it was time to commence cooking and ensure the steak was prepared properly. Other than that, everything else was straightforward.

Throughout the cooking process, the enticing aroma from the ribeye steak filled the air, heightening my anticipation.

Upon successfully cooking the steak without any burning mishaps, I arranged everything on the plate, sat down to my evening meal, and relished a mouth-watering ribeye steak.

It’s a simple, but remarkably delicious.

The Flat Iron Steak

Easy Asian-Inspired Flat Iron Steak : Recipe

Switching things up from the more standard ribeye steak, I opted for an easy Asian-inspired flat iron steak recipe.

It’s something you’re bound to enjoy—the incredible flavor resulting from the combination of the flat iron steak with other elements was truly amazing.

Similar to the previous meats, the aroma during the cooking process for this one was incredible.

Creating the sauce to pour over it proved to be a delightful experience.

Unfortunately, the photos don’t quite capture its essence; a bit more poured out than intended.

Thankfully, I had a second one, and it paired amazingly well with rice or potatoes.

While I don’t consider myself a master chef or even a particularly skilled one, I’m confident you could concoct something fantastic.

Yet, the meat’s flavor, combined with the other elements, was truly remarkable. This is another dish that, having made it, I would readily prepare again.

Yip I have still to get the final recipe typed up but I have been mega busy so keep watching for my posts I will also update this page when it’s out…but while I do that check Swaledale Butchers out and order a few items.
