Munro’s Turkey Club Sandwich : Recipe

Ingredients

Special Sauce: 

  • 1/2 cup mayonnaise
  • 1/2 cup cranberry sauce
  • 1 tablespoons Dijon mustard
  • 4 tablespoon honey

The Sandwich:

  • 1 focaccia or thick sliced bread if you cant find it
  • spinach leaves
  • 2 sliced cooked turkey
  • 2 slices Gouda cheese
  • 4 very thin cut sliced tomato
  • 3 Smokey bacon (cooked)

Method :

  • In a small bowl, mix the mayonnaise, cranberry sauce, mustard and honey till well mixed. 
  • Spread both sides with mayonnaise mixture. 
  • Layer bottom half  in this order : lettuce, turkey, cheese, tomato and smokey bacon.
  • Place the other slice on and cut diagonally.

White Chocolate Mint Mousse : Recipe

INGREDIENTS

  • 255 g white chocolate, broken into small pieces
  • 300 g double cream
  • 1 egg white
  • 2 tsp peppermint essence
  • fresh mint leaves (optional)

METHOD

  1. Put the pieces of white chocolate in a bowl, and sit bowl over a pan over simmering water until it melts, stirring gently with a spatula every now and then.
  2. When chocolate is melted, stand the bowl on a cold surface to cool down a little.
  3. In another bowl, and using an electric handheld whisk for ease, whip the cream, egg white and peppermint extract together. You want soft peaking rather than a stiff mixture.
  4. Put a big dollop of cream onto the slightly cooled chocolate and mix, and then gently fold the chocolate mixture into the cream.
  5. Divide mixture between your dishes.
  6. Chill in the fridge for at least 1 hour.
  7. Decorate top with a mint leaf before serving (if you got the mint leaves).

Breakfast Cupcake : Recipe

Ive seen people call this a cupcake or a muffin….

This is not a cupcake or a muffin in the traditional sense but I dont think it really has a name, but it kinda looks like a cupcake when its made…kinda

This is super easy to make and only takes 30 mins total time (20 mins cooking times)

Ingredients :

  • Bread (sliced and squared)
  • Egg
  • Ham
  • Shredded cheese

Method

  • Cut a slice of bread into a square shape by cutting off the crusts
  • Now cut in to the centre but leaving a square of attached bread in the centre
  • Put in the the tray and fold over the bottom edges (see photo)

  • Now place in your ham
  • Crack a full egg into the centre
  • Sprinkle your cheese over the egg
  • Put in the oven for 17-20mins at 170C
  • Take out and enjoy
